WHY THIS COFFEE?
We—and you—loved EXP009 (Passionfruit) so much that we had to try different versions of it. We had the banana co-ferment and fell in love again. It's a little different: honey, not washed, and with wine yeast. It's like biting into fresh baked banana bread.
Jairo Arcila, a Colombian coffee producer, processed this coffee with banana bread and wine yeast to bring out extraordinary fruit flavors. The coffee is a Castillo variety (see here for more information) grown at the Santa Monica farm in Quindio, Colombia.

BREW GUIDE
How long to rest: Three to four weeks. This is a light coffee.
We taste: Freshly baked banana bread: lots of baking spices behind a yeasty, bready, banana-filled aroma and cup.
We like: flat-bottom brewer, slightly finer grind, 1:16 ratio and mid-range temps around 203F.
