We're big fans of Jairo Arcila, a Colombian coffee producer whom we're proud to support. The coffee is a yellow sudan rume variety (see below for more information) grown at the Santa Monica farm in Quindio, Colombia. Our roast brings the sweetness out of the natural processing, like a blueberry pie with lavender, and keeps the acidity lively. Let it rest for two to three weeks.
