WHY THIS COFFEE?
We sampled this coffee from a younger coffee producer, Andres Cardona, back in January and we loved it. It's got a syrupy body, loads of flavor that remind us of our passionfruit co-ferment, with more grape and blueberry. Andres fermented the cherries for 96 hours with the addition of sugar cane honey to elevate the coffees sweetness. We roasted this one a little darker to mitigate any medicinal qualities in it. Let this one rest two to three weeks.
