WHY THIS COFFEE?
We've loved our recent coffees from banko chelchele, including the rue and lemongrass co-ferments. With fresh Ethiopian crops hitting the market we wanted something very fruit forward that is in line with Experimental's menu, but also something pushing the edge slightly in terms of character. We don't often see anaerobic naturals from Ethiopia and we wanted to bring this one to you to highlight what farmers are up to there.
PROCESSING DETAILS
This is a high intervention anaerobically fermented natural coffee from Chelchele, Ethiopia, produced by smallholder farmers organized around the Banko Chelchele washing station and the organization EDN, who have affectionately dubbed it “supernatural.”
The flavor profile is clean and fruit-forward, with strawberry, concord grape, pomegranate, and blackberry taking center stage, supported by hints of rose jam, cacao nib, and sweet citrus.

We taste: Think strawberry, jasmine, blackberry. The cup has a round body, obvious sweetness, lively acidity, and a clear flavor profile.
