WHY THIS COFFEE?
This was such a lovely and sweet coffee. We tried it at different roast profiles and settled on this one that is on the ultralight/light border, but with good development to bring out some fruitiniess and sweetness in it. This is a small family farm in Guatemala and we're happy to work with the Pérez family to bring this one to you.

BREW GUIDE
How long to rest: This one is borderline ultralight at an Agtron of 104. Let it rest a minimum of four weeks. If you're getting peanut in the cup, rest it more.
We taste: Honey sweetness, kiwi tartness, and strawberry notes.
We like it as: Conical brewer, fine grind, high temp. Extract this one.
