WHY THIS COFFEE?

It's a peaberry! We liked this one for its balance of sweet and jammy fig with lemon lime acidity. This coffee is also a fun mixture of different varietals that many folks have not tried. If you like light, sweet, syrupy bodies, this one is for you. We found this coffee to be best three weeks post roast.

We taste: A jammy fig body and lemon lime acidity.

We like it as: This one works with both conical and flat-bottom brewers. We like it on the more extracted side with higher temperatures and finer grinds. A 1:15 ratio works well here.

Rest: This is a light / very light roast at an Agtron of 101. Rest at least three weeks. Four to six may get you more of the lemon lime as well.
