WHY THIS COFFEE?

It's a peaberry! We liked this one for its balance of sweet and jammy fig with lemon lime acidity. This is also a fun mixture of different varietals that many folks have not tried. If you like light, sweet, syrupy bodies, this one is for you.

We taste: A jammy fig body and lemon lime acidity.

We like it as: This one works with both conical and flat-bottom brewers. We like it on the more extracted side with higher temperatures and finer grinds. A 1:15 ratio works well here.

Rest: This is a light / very light roast at an Agtron of 101. Rest at least three weeks. Four to six may get you more of the lemon lime as well.
