WHY THIS COFFEE?
We're big fans of Jairo Arcila, a Colombian coffee producer whom we're proud to support. The coffee is a yellow sudan rume variety (see below for more information) grown at the Santa Monica farm in Quindio, Colombia. Our roast brings the sweetness out of the natural processing, like a blueberry pie with lavender, and keeps the acidity lively. Let it rest for two to three weeks. PROCESSING DETAILS
Jairo Arcila’s Yellow Sudan Rume Natural comes from Santa Monica in Armenia, Quindio, Colombia, grown at 1,400-1,450 meters in volcanic ash soil. Sudan Rume is a rare Arabica variety originally from South Sudan, prized for its complexity, sweetness, and distinctive floral-fruit character.
This lot is naturally processed, with ripe cherries carefully selected, sorted, and fermented aerobically for 45 hours before drying on raised beds for about 8-12 days. That process helps create a sweeter, fuller-bodied coffee with deep fruit character.
In the cup, this 90-point coffee is vibrant and expressive, with notes of blueberry, lavender, red fruits, and brown sugar. It is a great choice for coffee drinkers looking to explore something exotic while still enjoying a sweet, approachable profile.
